Birthdays in 2020 were weird.

I was one of those lucky ones who had an early pandemic birthday. We were barely two months into *waves around* all this, and everything felt really weird and uncertain. So I decided to do something that would make me feel better: bake!
The night before my birthday, I queued up “Hocus Pocus” in the kitchen and set to work making myself a Halloween birthday cake, just for fun.
The results?

This cake is nothing fancy, but that’s part of what makes it fun. It also was ridiculously delicious. Here’s how I made it.
How I Made My Halloween Birthday Cake

Ingredients:
- White cake box mix (+ eggs, water and oil needed according to package)
- Chocolate cake box mix (+ eggs, water and oil needed according to package)
- Vanilla pudding
- Chocolate pudding
- Orange, purple and black food coloring
- Can of vanilla frosting (or Halloween frosting, if you can find it!)
- Halloween sprinkles
Suggested Supplies:
- Bundt pan (this one is $10!)

Step One: Mix white cake box mix
Start with the white cake mix so you can follow it with the chocolate mix without having to clean the bowl. Each cake mix is different, so follow the instructions for how many eggs and how much water and oil to add.
Add in the vanilla pudding to thicken the batter.

Step Two: Divide the white cake batter between two mixing bowls
Put a few drops of purple food coloring in one bowl and a few drops of orange in the other. Mix well. Add additional food coloring for a richer color. (I tend to like gel food coloring best these days.)
Step Three: Mix chocolate cake box mix
Do this according to the instructions, then add the chocolate pudding to thicken the batter. Also, add the black food coloring to darken the chocolate cake.

Step Four: Layer batter in the bundt pan
Grease your pan before adding the batter, then pour in a layer of the chocolate cake mix. Drizzle 1/3 of the orange batter on top, then 1/3 of the purple batter. Continue to add layers until the pan is 2/3 full. (You can always make cupcakes with any remaining batter…or be crazy like me and just pour it ALL in…)
Step Five: Bake!
Because we’ve added pudding and are baking this cake in a bundt pan, it will likely take longer than normal. Start with 30 minutes, then check your cake. Mine took a little over an hour to be baked through.
Step Six: Let cake cool completely
Once it’s baked, give the cake 10 minutes to cool, then remove it from the pan and allow it to cool completely.

Step Seven: Heat frosting for pour-over
I just used the canned frosting you can buy at the grocery store because, well, it was quarantine, and I wasn’t feeling fancy. I did put the frosting in a glass measuring cup and heated it for 30 seconds in the microwave and stirred it well before pouring it over my cake for the drip effect. Add sprinkles immediately after pouring on the frosting, then top with birthday candles and enjoy!
