I often get asked how I keep up with everything I do around Spooky Little Halloween. I write the blog. I send a weekly email newsletter. I create a quarterly printed Halloween zine. I run a year-round Halloween book club.

Oh, and I also work a 9-to-5 job that can be pretty demanding.

My secret? Coffee.

I usually start my day with iced coffee and have an afternoon iced latte habit. That second-coffee-of-the-day habit was one of the things I missed most about working from home early on in quarantine, so when making dalgona coffee (also called whipped coffee) became a trend I decided it try it as an afternoon latte alternative.

It was different – instant coffee has a unique taste – but it definitely satisfied the cravings I was having for thick, creamy lattes. I fell in love…and immediately wondered how I could make a Halloween version.

This is where I have to stop and admit…I am not a fan of THE pumpkin spice latte, i.e. the classic Starbucks drink. The PSL syrup has an aftertaste I can’t un-taste and don’t care for. I like Dunkin’s pumpkin drinks and even enjoy trying pumpkin lattes at local coffee shops.

But I’m determined to find a pumpkin coffee I love, and today’s recipe is way up there on the list.

Take the dalgona coffee trend from quarantine but make it Halloween! Here's how to make pumpkin whipped coffee.

Ingredients
  

Whipped Coffee

  • 2 Tbsp instant coffee
  • 2 Tbsp sugar
  • 2 Tbsp hot water

Pumpkin Milk

  • 1 cup milk
  • 2 Tbsp canned pumpkin
  • 1/2 tsp pumpkin pie spice
  • 1 tsp maple syrup

Instructions
 

Whipped Coffee

  • In a glass mixing bowl, combine two tablespoons each of instant coffee, sugar and hot water. (I usually boil about half a cup of water in a microwave kettle - this one is similar.)
  • Whip with a hand mixer until the mixture turns light brown and is the consistency of meringue.

Pumpkin Milk

  • Combine canned pumpkin and pumpkin pie spice in a bowl. Stir until spices are absorbed into the pumpkin. (To make your own pumpkin pie spice, combine 1 tablespoon of cinnamon, 1 teaspoon of nutmeg and ginger, each, and half a teaspoon of cloves.)
  • Add milk to pumpkin mixture and stir to combine.
  • Add syrup and stir to combine.

Assemble Pumpkin Whipped Coffee

  • Pour pumpkin milk into your serving mug or glass.
  • Using a spatula, spoon whipped coffee mixture onto the top of the pumpkin milk.
  • Top with Halloween sprinkles (optional) and enjoy!

Notes

If you want the layered effect for your coffee, follow the instructions above. I prefer to combine my milk and whipped coffee completely for a better-tasting coffee...that's also easier to drink.
You might also consider making pumpkin milk and allowing it to stand in the fridge overnight so the flavors can meld better.

 

 

There’s a bit of magic science happening with a whipped coffee. You have to have just the right balance of instant coffee (yes, it has to be instant crystals), sugar and hot water to get the whipped part to a good consistency.

(And because I know you’ll ask, the jack-o-lantern percolator was a Christmas gift my mom found at a local flea market. The Jack Skellington mug was an exclusive item from Gorejess Laboratory in a Glamour Ghoul Box in 2017.)

 

 

While you can whip your coffee mixture by hand…a little hand mixer makes the job SO much easier. A stand mixer would work as well.

 

 

Rather than adding pumpkin to the coffee mixture itself, I decided to make a pumpkin milk for this recipe. It took a little finessing, but I found that adding a bit of maple syrup to the pumpkin milk helped brighten the pumpkin and spices.

 

 

While this recipe is written to make within 10 minutes, I do recommend allowing your pumpkin milk to stand overnight for a better pumpkin flavor.

 

 

Halloween sprinkles are the perfect topping!

 

 

And if you want to make it a boozy coffee drink…trade out the pumpkin milk for a pumpkin spice cream liqueur!

    I am LOVING this pumpkin whipped coffee idea since I’m not really fond of PSL’s either; your post got me wondering what other drinks can be made with the pumpkin infused milk.
