How to Make Watermelon Lime Zombie Pops

They’re coming to get you, Barbara!  I mean…how can you NOT use that as your opening line on a blog post about zombies? Zombie popsicles, to be more specific. Earlier this year, my cousin Stephanie texted me one night because she had found some zombie popsicle molds and thought I needed them.

And I immediately dreamed up all the spooky summer popsicles I could make, so I bought them.

It took me a while to get to them this summer – and I’m already dreaming up more flavors for next year – but I’m excited to share one more summerween treat with you today that is ridiculously easy to make: watermelon lime zombie pops!

 

 

How to Make Watermelon Lime Zombie Pops

I like keeping my recipes simple, and this one doesn’t get any easier. It took a little perfecting, but I’m really happy with how these turned out.

The hardest part is waiting for your zombie pops to freeze once you mix them up!

Watermelon Lime Zombie Pops

Want to carve a jack-o-melon? Here's how, plus what to do with the "guts". This refreshing summer treat is easy to make...but might leave you with a frozen zombie brain if you enjoy it too quickly!

Servings 8 popsicles

Ingredients
  

  • 3-4 cups watermelon (fresh)
  • 1 lime (juice and zest)

Instructions
 

Jack-O-Melon

  • Using a sharp knife, cut a circle around the top of your watermelon like you would use for a jack-o-lantern. Remove watermelon "lid" and cut away pink melon.
  • Using a large metal spoon, scoop watermelon into a large bowl. Clean inside of watermelon like you would a jack-o-lantern. You may want to set your hollow watermelon in the sink or on a towel upside down for 20-30 minutes to drain excess moisture. (They're juicier than a pumpkin!)
  • Carve a jack-o-lantern face in your watermelon. Add candle and light up for a bit of summerween fun!

Watermelon Lime Zombie Pops

  • Place 3-4 cups of fresh watermelon in a blender. Add the zest and juice of one lime. Blend until smooth.
  • Strain mixture into a bowl or another pitcher. This is key for getting good watermelon flavor in your popsicles and making sure they don't get too icy.
  • Pour mixture into popsicle molds. (I used these.) Place in freezer overnight (8-12 hours).
  • Remove popsicles from molds and enjoy!

 

 

I love that these popsicles are just watermelon and lime. They’re super refreshing for summer, and the addition of the lime adds the perfect amount of brightness to one of my favorite summer fruits.

 

 

These zombie popsicle molds are pretty stellar too. I love that the feet on each handle allow the zombies to stand on their own!

 

 

While this recipe is pretty simple, the key is making sure you strain your watermelon lime mixture before pouring it into your popsicle molds. My first round of pops had a little too much water in them before I did this…and the color wasn’t nearly as vibrant.

 

 

So cute!

 

 

Bonus points for using a fresh watermelon! Personal sized melons are so easy to find in the summer and just the right amount of watermelon for this recipe. Plus, then you can carve up a super cute jack-o-melon!

My tips:

  • Cut the lid at an angle like you would with a pumpkin so it doesn’t fall in.
  • Use a metal spoon (like this) to big out your melon guts and place them in a large bowl.
  • Dump liquid out as you go – watermelons are a lot juicier than pumpkins!
  • And on that note, once you’ve de-gutted your jack-o-melon, allow it to drain upside down for 20-30 minutes so remove additional moisture.

 

 

My final tip: store your jack-o-melon in the fridge for a longer shelf life. (And maybe to freak out your family or roommates…)

 

 

P.S. My actual favorite part of these zombie pops? That the handles had a ribcage!

    That is a super cool idea. I love it! I like to put those burnable skulls in my campfire ( or yard fire) to spook up family get-togethers.
