I scream, you scream, we all scream for Halloween...ice cream, that is!

As the summer heat sinks in, there’s nothing I want more than a delicious treat to cool me down. I’ve been known to eat only ice cream for dinner from time to time as the Texas heat tightens its grasp on us. What can I say? Texas is HOT, y’all.
And, of course, that treat is better when it’s Halloweenified.
This recipe is one of my family’s favorites to this day. My brother and I often requested it for our birthday cake, and we’ve made various iterations of it for many holidays – but never Halloween!

Today, I’m righting that wrong.
Whether you’re looking for a way to beat the summer heat or simply looking for a new dessert to serve at your Halloween party, this ice cream cake is perfect. It’s four easy layers, and you can switch out the ice cream flavor to anything you please. I hope you’ll enjoy it as much as we have!
Easy 4-Layer Halloween Ice Scream Cake

Easy 4-Layer Halloween Ice Scream Cake
Ingredients
- 1 package Halloween Oreo cookies
- 5 Tbsp butter
- 1 quart pumpkin ice cream
- 1/2 cup chocolate syrup
- 1 container whipped topping
- 2-3 Tbsps Halloween sprinkles optional
Instructions
- Place one package of Halloween Oreo cookies into a gallon-size plastic bag. Remove all air and seal. Crush cookies with a rolling pin. Add to the bottom of a 9-by-13 inch pan.
- Melt butter and pour over crushed Halloween Oreo cookies. Mix with hands until cookies are well coated with butter and press crust into the bottom of the pan.
- Soften and add one quart of ice cream. Spread evenly on top of the crust.
- Add approximately a 1/2 cup (or more!) of chocolate syrup on top of the ice cream layer.
- Add 1 container of whipped cream. Spread evenly on top of the ice cream and chocolate layer.
- Add 3-4 tablespoons of Halloween sprinkles to the top of the whipped cream layer. Alternately, you can reserve 1/4 cup of Halloween Oreo cookies and add those to the top instead or in addition to the sprinkles.
- Place cake in the freezer for 2-4 hours to solidify.
- Cut into squares to serve. Enjoy!
Halloween Ice Scream Cake, Step by Step:

First, you’ll need two seasonal gems: pumpkin ice cream and Halloween Oreos. (Confession: both of these have been stashed in my freezer just for this recipe!)

And I’ll admit, while I am not an every day Oreo fan, there’s something about the Halloween ones that makes them taste better. Or is it just me?

To get started, we’ll toss all the Oreos into a gallon sized plastic bag and crush them with a rolling pin. (I used a little less in my recipe for photos since I’m a household of one and don’t need to eat an entire pan of this dessert by myself…)

Once the Oreos are crushed, toss them in the bottom of a 9-by-13 inch pan. (Again, I used a smaller pan for my photos.)

Then melt five tablespoons of butter, drizzle over the crushed Oreos and mix with your hand until the cookies are coated. Press the crust into the bottom of the pan.

Next, soften your ice cream and add it on top of the Oreo layer.
I used pumpkin ice cream from HEB, one of my favorite local grocery store chains in Texas, to add a little extra Halloween flavor. You can try making your own, or sometimes you can find it on Amazon.
You can also use any ice cream flavor you love. (We loved peppermint for the holidays!)

No matter what ice cream flavor you choose, spread it evenly across the top of the crust layer.

Next, add a healthy pour of chocolate syrup, like Hershey’s, to the top of the ice cream layer. I only poured it pretty for the photo. You won’t see this layer, so be as neat or messy as you want.

For layer four, we’re heaping on an entire container of whipped topping. Spread it evenly across the top of the ice cream and chocolate layer.

And finally, add some Halloween sprinkles! Alternately, you could add crushed Halloween Oreos to the top as well as candy corn or even your favorite Halloween candy. (This is mine!) Allow the entire dessert to refreeze over 2-4 hours by placing it in the freezer.

When you’re done, it should look something like this!

Cut into squares and serve!
It might not be the prettiest dessert when cut, but I promise it IS one of the most delicious – and cool – spooky summer treats around.
