I have two words for you: Pumpkin. Mimosas. Oh yes, THIS IS HAPPENING.
The idea started last Halloween season. My goal for Halloween night was to whip up some pumpkin juice, combine it with some champagne and enjoy a horror movie.
Unfortunately, my body had other plans and instead I found myself sick in bed with a 102-degree fever. I guess Halloweenie Roast 2016 wore me out more than I thought.
So last month when I put together my perfect pumpkin juice, I decided to give pumpkin mimosas a try, and I was NOT disappointed.

They’re the perfect blend of fall-in-a-glass and bubbly goodness.
Here’s my recipe for pumpkin mimosas:
Step-by-step directions follow the recipe.

Notes
How to make pumpkin mimosas:

Mix up a batch of my perfect pumpkin juice and find a sweet champagne. (Don’t follow my example with extra dry! Sweeter varieties better complement the pumpkin juice.)

You’ll also need a couple champagne flutes for your drink!

Fill your champagne flutes with one part pumpkin juice.

Add two parts champagne.

So many bubbles!

Pumpkin juice is pretty dense compared to champagne, so you’ll need to do some mixing.

I found a stir stick worked best. Mix gently so the champagne doesn’t bubble up and overflow in the glass.

Your mimosas should look something like this!

Bubbly and perfect!

And……delicious!

Now THIS is my kind of cocktail. Simple, easy and sooooooo yummy. I love champagne cocktails. Don’t you think Chronic Cellar’s Spritz and Giggles would compliment the pumpkin juice well? Definitely adding this to my recipe book. What’s even better? This would be great to make a batch of and serve during fall time as a whole, such as at a family gathering for Thanksgiving. ;)
